This one's for you, Kelly (and anyone else needing a good treat this weekend)
Carrot Cake
2 C. flour
2 C. sugar
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
4 C. shredded carrot
1 C. oil
4 eggs
In mixing bowl, combine the flour, sugar, soda, salt & cinnamon. Add the carrot, oil & eggs; beat with electric mixer for 2 minutes. Pour into a greased 9x13. Bake at 350* for one hour.
Frosting
1/2 pkg. cream cheese
1/4 C. butter
1 tsp. vanilla
2 C. powdered sugar
Combine butter, cream cheese and vanilla; cream until fluffy. Gradually add powdered sugar; beat until smooth.
